Sorry I haven't been making more vids this week! I'm enjoying a great visit with family. Although I'm able to watch other's videos, it's not very easy to find time to make them this week! Will resume normal programming next week when we return to our normal operating schedule lol!

It's been an eventful week. Sharing some experiences and looking forward to getting back to a normal routine. Also, sorry about the fluffy hair- I just woke up lol.

9 cups vegetable broth
1 1/3 cups wild rice, well rinsed
4 tablespoons vegan buttery sticks (earth balance)
3 yellow onions, chopped
3/4 teaspoon ground cardamom
1 teaspoon ground allspice
2 bay leaves
1 cup dried cranberries
1 cup dried golden raisins
2 teaspoons grated orange zest
Salt and ground pepper to taste
1 1/2 cups long-grain white rice
1/2 cup pine nuts, toasted ( or roasted pecan pieces)
1/2 cup chopped fresh flat-leaf parsley
In a saucepan over high heat, bring 6 cups of the vegetable broth to boil. Add wild rice and return to a boil. Reduce heat to medium and simmer uncovered, stirring occasionally until rice is tender but still slightly firm to the bight, about 40 minutes. Meanwhile, in a large heavy saucepan over medium- high heat, melt buttery stick pieces, add onions and sauté, stirring occasionally until tender, about 12 minutes. Add cardamom, allspice and stir for about 20 seconds. Add remaining 3 cups of vegetable broth, bay leaves and raisins and cranberries. Also add orange zest. Season with salt and pepper if desired. Bring to a boil. Add white rice, reduce heat to low and cover. Cook until liquid is absorbed and rice is tender, about 20 minutes. Drain wild rice if needed. Remove the bay leaves from white rice mixture and discard. Gently mix the white rice and wild rice together. Stir in the nuts and parsley. Serve and enjoy!:)

If you are someone who suffers from interstitial cystitis and chronic pelvic pain, a switch to a high carb low fat vegan lifestyle could make all the difference in alleviating the negative symptoms you are struggling with. I also highly recommend the book "The Better Bladder Book" by Wendy Cohen RN.
Another thing I highly recommend (I'm not a doctor or medical professional but someone who has suffered with this for decades) is to take lots (at least 2 to 3 daily) of Ester C which is a non acidic form of vitamin C 500 mg that can help bolster your immune system to deal with the toxins and bacteria that may find their way into the body's system.
