This year has brought so many wonderful experiences, all associated with this awesome vegan life that I have been blessed to have. Some of the biggest treasures have been the friendship, support and community that I have found here. Finally broke through the horrible plateaus that have been plaguing me through this hormonal change so that I can reach my fat loss goals. Here are some things I used to help.

Sorry I haven't been making more vids this week! I'm enjoying a great visit with family. Although I'm able to watch other's videos, it's not very easy to find time to make them this week! Will resume normal programming next week when we return to our normal operating schedule lol!

Daily vegan stuff, successes and mistakes.

For the dipping sauce :
1/4 cup water
2 tablespoons plus 1/2 teaspoon freshly squeezed lime juice
2 tablespoons plus 1/2 teaspoon freshly squeezed orange juice
1/2 cup raw almond butter
1/2 teaspoon minced ginger
1 teaspoon agave nectar
1/2 teaspoon finely chopped garlic
1/2 teaspoon tamari sauce or liquid aminos or soy sauce
1/8 teaspoon red pepper flakes
Pinch of finely grated lime zest.
Throw all ingredients into a blender and blend until smooth. Serve alongside spring rolls. Enjoy!! ( inspired by the dipping sauce from the book Blender Girl by Tess Masters)

Pomegranates are rich in antioxidants, have anti-inflammatory effects, can help reduce the symptoms of heart disease and hypertension. It has been found to lower blood pressure, reduce the rusk of hardening if the arteries, and regulates blood sugar and it's also been found very useful in reducing overall body fat content. Well worth a little splurge once in a while!

It's been an eventful week. Sharing some experiences and looking forward to getting back to a normal routine. Also, sorry about the fluffy hair- I just woke up lol.

Visiting family and keeping healthy :)

9 cups vegetable broth
1 1/3 cups wild rice, well rinsed
4 tablespoons vegan buttery sticks (earth balance)
3 yellow onions, chopped
3/4 teaspoon ground cardamom
1 teaspoon ground allspice
2 bay leaves
1 cup dried cranberries
1 cup dried golden raisins
2 teaspoons grated orange zest
Salt and ground pepper to taste
1 1/2 cups long-grain white rice
1/2 cup pine nuts, toasted ( or roasted pecan pieces)
1/2 cup chopped fresh flat-leaf parsley
In a saucepan over high heat, bring 6 cups of the vegetable broth to boil. Add wild rice and return to a boil. Reduce heat to medium and simmer uncovered, stirring occasionally until rice is tender but still slightly firm to the bight, about 40 minutes. Meanwhile, in a large heavy saucepan over medium- high heat, melt buttery stick pieces, add onions and sauté, stirring occasionally until tender, about 12 minutes. Add cardamom, allspice and stir for about 20 seconds. Add remaining 3 cups of vegetable broth, bay leaves and raisins and cranberries. Also add orange zest. Season with salt and pepper if desired. Bring to a boil. Add white rice, reduce heat to low and cover. Cook until liquid is absorbed and rice is tender, about 20 minutes. Drain wild rice if needed. Remove the bay leaves from white rice mixture and discard. Gently mix the white rice and wild rice together. Stir in the nuts and parsley. Serve and enjoy!:)
